Hot Chicken Wings with Habaneros

See below for some fantastic ways to make hot chicken wings with habaneros. The recipes shown are simple and delicious. One nice thing about cooking and adding spicy heat with a habanero pepper is that you can get the kick with a mild pepper punch, or you can bring the heat by adding more chili peppers to match your fowl taste. Barbecue Habanero Chicken Wings    

Just the name conjures up visions of scrumptious looking plates of BBQ. This relatively simple grilling recipe will knock your socks off with heat! Personally, I love grilling and barbecue. It is a match made for culinary success.

Meat:
  • 2 dozen chicken wings (cut in two - flats and drumettes)
Sauce Ingredients:
  • 2 to 4 habaneros (roasted whole, take out stem and seeds, chopped)
  • 5 garlic cloves, chopped
  • 2 tbsp olive oil, or canola oil
  • 3 cups tomato sauce
  • 1 cup sweet onion chopped
  • 1/2 cup red or green bell pepper chopped
  • 1 1/2 tbsp dark mustard
  • 1/3 cup honey
  • 1/3 cup apple cider vinegar
  • large drizzle of molasses or 1/3 cup of light brown sugar
  • 2 tbsp dark brown sugar
  • 3 tbsp worcestershire sauce

Rub Ingredients:

1 1/2 tsp garlic powder
2 tbsp paprika, (smoky)
1/2 tsp cayenne pepper
2 tsp ground black pepper
1/2 tsp light brown sugar
1/2 tsp cumin
1/2 tsp salt

Steps to make:

Sauce: After roasting and chopping up the habanero chili peppers, then prep a dutch oven on the stove top or the grill. Put your sauce ingredients into the pot and simmer. Cook and render down the ingredients on medium heat for about 40 to 50 minutes. Stir the pot occasionally to keep from burning on the bottom of the pot. Salt to taste.

Chicken wings: Mix the rub ingredients together in small bowl. Next you will want to coat all of the wings with the rub mixture. You can do this one at a time by hand, or put the rub mixture into a bag and shake all of the wings inside the bag.

Grilling: Prep your grill and heat to medium or a little hotter temperture. Place your wings onto the grill, turning periodically while cooking. Once the wings are about half done, start covering the wings with the bbq sauce mixture. Here you can use as much or as little of the habanero bbq sauce on the wings as you like. One technique is to give the wings a generous coating and let cook for a couple of minutes. Then give them another generous coating and turn the wings until done, which should be another 3 to 4 minutes. Control the cooking by transferring wings on and off the hot portion of the grill to keep them from burning. Serve immediately.
