Orange Pineapple Habanero Sauce

Recipe 1:

Start by prepping and preparing your ingredients:

  • 1/2 tsp of habanero pepper, (fine chop and seeded)
  • 2 1/2 cups of chopped pineapple chunks
  • approx 3 to 4 tbsp pineapple juice
  • 1/2 cup fresh squeezed orange juice (some pulp ok)
  • 1 1/2 tbsp lime juice, (ok to get some of the pulp in there)
  • 2 tsp chopped thyme
  • 1 level tsp salt
  • 2 chopped scallions
  • 1 tbsp fine chopped sweet onion
  • 1/2 tsp allspice (ground)


To make follow these steps:

  • Stir, mix and gently blender all of the ingredients and let it sit to marinate for approx 45 minutes to 1 hour. This is the time that all of the flavors get sorted out. You could serve it at this temperature, but some people like to serve it slightly chilled. Try it both ways and see how you like it best.
Recipe 2:

Prep with the following ingredient list:

  • 5 to 6 habaneros
  • 1 pineapple cored and chopped
  • 3 oranges
  • 2 tbsp lime juice
  • 3/4 tsp salt
  • 3 chopped scallions
  • 1/4 tsp cumin

Steps to make the pepper sauce:

  • grill or saute the habanero peppers to activate the oils in its skin
  • prep the habanero by taking out the seeds and stem
  • chop and deseed the oranges
  • add all ingredients to a blender
  • blend until saucy smooth in texture
  • let it marinate and sit for a while so the flavors will blend
